Ingredients:

  • 1 cup almonds, toasted and coarsely chopped (divided)
  • 1 cup granulated sugar
  • 1/2 lb unsalted butter (2 sticks or 1 cup)
  • 1 tsp vanilla extract
  • 1/2 tsp fine sea salt
  • 1 cup semi-sweet chocolate chips (or milk chocolate)

Directions:

Step 1

To start, grease a 9 x 13 baking dish with some butter, then line it with a sheet of parchment paper. Next, toast your almonds until they are fragrant and lightly golden. After this, transfer them to your chopping board and coarsely chop them. Spread half of the almond into your prepared baking dish and set aside the other half. Now, add two sticks of cubed unsalted butter, 1 cup granulated sugar, 1/2 tsp fine sea salt, and 1 tsp vanilla extract into a small saucepan. Place the saucepan on the stove over medium heat and stir it continuously, until everything melts together.

Step 2

Once it starts to boil, add the clip-on thermometer and just continue to stir constantly until the temperature reaches 300 degrees F. Immediately pour it over the nuts, then even it out by tilting the pan. Sprinkle the chocolate chips over right away, and let them soften up for about two minutes, then spread them around using an offset spatula. Lastly, sprinkle the remaining almond over the chocolate layer. Let it cool until the chocolate has firmed up (about two hours). Once done, crack it, then serve. Enjoy!
