To start, prep your veggies. Quarter four cremini mushrooms and roughly chopped 1/4 red onion, 3/4 green bell pepper, 3/4 red bell pepper, and broccolini. Next, prepare the sauce. Combine 1 tbsp hoisin sauce, 1 tsp dark soy sauce, 1 1/2 tbsp soy sauce, 1 tsp black vinegar, and a splash of sesame oil. Mix well.

Now, heat a large pan over medium heat, then drizzle some olive oil. Once heated through, add the chopped red onion and bell peppers and saute for a couple of minutes. Next, add the mushrooms and broccolini. Continue to saute for another three to four minutes. After this, add the baby corn and the prepared sauce. Saute for another couple of minutes. Serve and enjoy!
