Lemon treats are just so refreshing, especially during the summer season. Preheat the oven to 350 degrees F and line a 9 x 13 baking dish with parchment paper.
In a stand mixer bowl or an ordinary bowl, sift all-purpose flour, salt, and powdered sugar. Next, mix the dry ingredients.
Turn your stand mixer on low or your hand mixer and drizzle the unsalted butter in. Mix until it becomes a crumbly mixture.
Transfer the shortbread mixture to the lined pan. Spread it using your hands and press it down for the crust. Make sure to also press the corners. Place in the oven to 350 degrees F and bake for 20 minutes.

While the crust is in the oven, put 3 cups of sugar into a food processor. Next, zest the 3 lemons and place them into the processor. Mix until all the zest is broken up. Set aside.
Juice the 3 lemons and measure 1 cup of them. Get a big bowl and transfer in the sugar with zest. Add 1/2 cup of all-purpose flour and mix using a whisk. Next, add 8 large eggs and 1 cup of lemon juice. Mix them all using a whisk.
Remove the crust from the oven and pour the filling. Place in the oven at 350 degrees F for about 25 minutes. Do not let it brown.
Remove it from the oven and let it cool. Then place in the fridge for 2 hours. Take it off from the pan and peel the paper. Dust with refined sugar. Slice and wipe the knife in between cuts. Serve. Enjoy!
