- 2 ½ cups of all-purpose flour
- 2 teaspoons of baking powder
- ½ teaspoon of salt
- ¾ cup of sugar
- 1/3 cup of oil
- 1 cup of plain full-fat Greek yogurt
- 2 large eggs
- Zest of 2 lemons
- 2 tablespoons of lemon juice
- 1 teaspoon of vanilla extract
For the lemon glaze:
- 1 cup of powdered sugar
- 2 to 3 tablespoons of lemon juice
How to Make Lemon Muffins
Step 1:
Mix all the dry ingredients in a bowl and set it aside.
Step 2:
In a different bowl, add all the wet ingredients and mix until well combined using a hand whisk.
Step 3:
Add the dry mixture to the wet mixture and mix until just combined. Do not overmix the batter. Divide the batter into the greased muffin pans using a 3-tablespoon ice cream scoop.
Step 4:
Place inside a 350F preheated oven on the lower 2/3 rack and bake for 23 minutes or until a skewer comes out clean. Once done baking, remove the pan from the oven and let it cool for 5 minutes.
Step 5:
After 5 minutes, run the tip of a knife around each muffin and remove it from the pan. Place on a wire rack to cool completely.
Step 6:
Make the lemon glaze. In a bowl, add powdered sugar and gradually pour the lemon juice while mixing everything using a spatula. If the consistency is too thick, add more lemon juice.
Step 7:
