Chicken
Dijon Cream Sauce
Step 1
Place each chicken in a plastic wrap, then pound it with a meat tenderizer until ¼ inch thick, and then season the chicken on both sides with salt, pepper, garlic powder, and onion powder. Put 2 slices of cheese and 2 slices of ham on top of each chicken, then carefully roll it from the narrower end, and tuck the sides as you go, secure it with toothpicks.
Step 2
In one shallow dish, add the flour, then in the second one, add the beaten eggs, and in the third one, add the breadcrumbs. Dredge each rolled chicken in flour, then the eggs, and then breadcrumbs. Heat the vegetable oil in a large skillet over medium heat, then cook the chicken rolls for 8 to 10 minutes on each side or until golden brown and cooked through or until the internal temperature reaches 74°C or 165°F.
Step 3
Transfer the cooked chicken rolls to a plate lined with a paper towel, then set it aside to cool down, and prepare the Dijon cream sauce while waiting. Place a medium saucepan on a stove over medium heat, then melt the butter, add the flour, and cook it for about 1 to 2 minutes or until lightly golden and bubbly.
Step 4
Gradually pour in the chicken broth while whisking continuously then bring it to a simmer, and let it cook while still stirring for about 3 to 5 minutes. Add the Dijon mustard, then give it a good stir, season it with salt and pepper to taste, and let it simmer for 2 more minutes before removing it from the heat. Serve and enjoy!
