Ingredients for Roasted Cherry Salsa:

  • 2½ cups of cherries, fresh or frozen
  • jalapeños, stem removed and chopped
  • Roma tomatoes, diced
  • 1 cup of red onion, diced
  • 2 cloves of garlic, smashed
  • 2 tbsp of vegetable oil
  • 2 tbsp of honey
  • ½ lime, juiced
  • ½ cup of fresh cilantro
  • Kosher salt, to taste
  • Black pepper, to taste

How to Make Roasted Cherry Salsa:

Step 1

Preheat your oven to convection broil at 450°F, then line a baking sheet with parchment paper.

Step 2

Add the cherries, jalapeños, tomatoes, onion, and garlic to the prepared baking sheet, then drizzle the vegetable oil, and toss them until well combined.

Step 3

Season them with salt and pepper, then place them in the preheated oven, and let them roast for about 18 to 22 minutes.

Step 4

Once done roasting, transfer them to a blender making sure to scrape the bottom well, then add the honey, lime juice, and cilantro, and blend them until smooth or desired consistency.

Step 5

Adjust the seasoning to taste, then serve, and enjoy!
