Ingredients:

For the custard:

  • 2 egg yolks
  • 1/4 cup (40 g) sugar
  • 2 & 2/3 tbsp (20 g) cornstarch
  • 2/3 cup (170 g) of milk
  • 1/3 tsp (2 g) vanilla extract
  • 1/2 tbsp (8 oz) unsalted butter

For the bread:

  • 2 & 1/8 cup (285 g) of bread flour
  • 4 tbsp (50 g) sugar
  • 1 & 1/2 tsp (5 g) instant yeast
  • 1 & 1/3 tbsp (20 g) lukewarm water
  • 2 tbsp (15 g) milk powder
  • 1/2 tsp (2 g) lemon juice
  • 1/2 cup (140 g) milk
  • 1 egg
  • 1 & 1/3 tbsp (20 g) unsalted butter
  • a pinch of salt
  • sliced almonds, for the top

Directions:

Step 1

Add 2/3 cup of milk, 1/3 tsp vanilla extract, and 1/2 tbsp unsalted butter in a saucepan over medium heat. Next, combine 2 egg yolks, 1/4 cup sugar, and 2 & 2/3 tbsp cornstarch. Whisk to combine. Slowly add the heated milk to the yolk mixture while whisking. Strain the mixture back into the saucepan and heat it again over medium heat. Continue to whisk it until it becomes thick. Trasfer the custard to a bowl and cover it with a cling wrap touching the surface. Refrigerate for at least two hours. Next, combine 4 tbsp sugar, 1 & 1/3 tbsp, and 1 & 1/2 tsp instant yeast in a small bowl. Set it aside. After this, combine 2 & 1/8 cups of bread flour, 2 tbsp milk powder, and 4 tbsp sugar.

Step 2

Transfer the flour mixture to the stand mixer bowl. Stir it for a minute, then add 1/2 cup milk, 1/2 tsp lemon juice,  and half of 1 whisked egg. After five minutes, add the bloomed yeast and a pinch of salt. Raise the mixing level to two, then add 1 & 1/3 tbsp unsalted butter. After mixing, raise to level four for six to seven minutes. Turn the mixer off and let the dough rest for five minutes, then raise it to level six for four to five minutes. After this, let the dough rest for another two minutes. After two minutes, mix the dough one last time for two minutes. Transfer the dough to a bowl and cover it with cling wrap. Let the dough rise for one to two hours.

Step 3

Meanwhile, remove the custard from the fridge, and strain it for a smoother texture. After two hours, transfer the dough to your working surface and roll it out in a rectangular shape. Spread the custard to the surface, then gently roll the dough into a log. Cut it into pieces and place them in a parchment paper-lined baking tray. Let them rise for an hour, then brush each with egg wash. Lastly, topped them with sliced almonds. Bake them for 15 minutes in a 330 degrees F oven. After 15 minutes, change the temperature to 350 F and bake for another three minutes.
