To make this creamy crack chicken, you only need 6 ingredients–chicken breasts, ranch dressing mix, cream cheese, bacon, cheddar cheese, and green onions. The green chilis are optional. If you love a little bit of kick, go ahead and add them. You can serve it with coleslaw, mashed potatoes, roasted vegetables, bread, tortillas, bun, or over rice.
Add the chicken breasts to the bottom of your slow cooker. Sprinkle 1 packet of ranch dressing mix over the chicken breasts, then place the block of cream cheese on top. Sprinkle diced green chilis if adding.
Place the lid on the crockpot and let it cook on low for 6 to 7 hours or on high for 4 to 5 hours until the chicken is fork tender.
Once done cooking, take off the lid and shred the chicken using a meat chopper. Alternatively, you can transfer the chicken into a bowl and shred using two forks. Mix the shredded chicken well with the cream cheese. Cook for 15 minutes more to combine all flavors.
Sprinkle bacon bits, shredded cheddar cheese, and sliced green onions. Cover with the lid again and cook for a few minutes until the cheese has melted. Mix everything to combine.
Serve the crack chicken with buns, tortillas, or over rice or pasta. Enjoy!
