My favorite food has always been chicken and tortillas! I also love cooking anything in the crockpot, why I had never thought of making my favorite dish, chicken tortilla soup, in the crockpot is understandable I guess, but I did not even think of it. I saw a recipe for crockpot chicken tortilla soup on Youtube and had to try it, after all, I love all chicken recipes and I also love my crockpot so it was an obvious match made in Heaven for me. So this is the thing, you can learn how to make chicken tortilla soup in a crockpot in 20 minutes with just a few ingredients using a bag of chips or by frying your own tortillas. The other great thing is the broth of this tortilla soup is incredibly nutritious and the crockpot actually steams the chicken perfectly, it’s so delicious and succulent! This recipe couldn’t be easier, I just threw all these ingredients into the crockpot, (no pre-cooking necessary). I started by adding all my ingredients to the crockpot. I was so super excited to try this recipe, I couldn’t wait to get my ingredients together!
Ingredients:
- Chicken Breast
- Black Beans
- Corn
- Fire Roasted Tomatoes
- Cumin
- Chili Powder
- Limes
- Avocado
- Tortilla Strips
- Cilantro
- Garlic
- Onion
- Bell Peppers
Directions:
Add all ingredients to the crockpot cook on high for 4 hours.
Then shred chicken and add it back to the soup.
Then plate your soup and add garnishes of avocado and a squeeze of lime.
Then add some tortilla chips to the top and enjoy!
This tortilla soup is perfect for a winter day and my entire family loves it.
