Ingredients:

  • 2 lb fresh Brussels sprouts, trimmed and halved
  • 1/3 cup pure maple syrup
  • 2 tbsp honey
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 cup fresh cranberries
  • 1 cup feta cheese, divided

Directions:

Step 1

Add the Brussels sprouts to your slow cooker followed by 1 cup fresh cranberries, 1 tsp salt, 1/2 tsp ground black pepper, 1/4 cup olive oil, 1/3 cup pure maple syrup, and 2 tbsp honey. Give it a quick mix, then place the lid on. Set the slow cooker to low and cook for four hours or high for three hours.

Step 2

Once done cooking, remove the lid and stir in 1/2 cup of feta cheese. Place the lid on and cook for another 20 minutes on high. After this, transfer to a serving bowl and garnish with the remaining feta cheese. Serve and enjoy!
