Ingredients: 

  • 2 lbs pork brisket cubed
  • 4 tbsp oil
  • 5 oz red onion, diced
  • 3 oz celery, chopped
  • 2 oz carrots, peeled and chopped
  • 3 cups beef stock
  • 1 cup red wine
  • ½ tsp dried thyme
  • Salt & ground black pepper

Directions: 

In a large skillet, heat the oil. Cook the meat in a hot skillet until well-browned on both sides. Make a space for it. Remove any extra fat by pouring it out. In the same skillet, cook the onion and thyme until transparent.

For a few minutes, deglaze with red wine and reduce.

Simmer for two minutes with some beef stock. Continue cooking until the meat is fork-tender, then add some carrots and celery.
