Fried chicken is a staple food that you can find almost at any restaurant, every single one has a different take and version of this yummy dish. However, the best fried chicken ever in my opinion are those that came from the south! Perfectly seasoned and crispy yet very simple to make, just like this one by Coop Can Cook on YouTube.
Spice blend
Step 1
After cleaning the chicken, removing the excess fat, and making sure it’s dry, place it into a large mixing bowl. In a small mixing bowl, combine the cajun or creole seasoning, poultry seasoning, onion powder, garlic powder, lemon pepper, and celery salt. You can also add some accent flavor if you want. Mix the spices together until uniform, then sprinkle half of it on the chicken. Rub the spices into the chicken evenly, then pour the buttermilk over them, don’t worry about the spices floating in the milk. Cover the chicken, then place it inside the fridge, and let it sit for at least 4 hours or up to overnight.

Step 2
In a Ziploc bag or mixing bowl, add the flour, cronstarch, and remaining spice blend, then set it aside. Take the chicken out of the fridge and remove it from the buttermilk mixture making sure to shake off the excess. Add the chicken into your dry coating, you can use whatever you want, then place a deep fryer or frying pan on a stove over medium-high heat, and heat up the oil. Add the pieces of chicken into the hot oil making sure to work in batches to not overcrowd the pan. Cook them until both sides are evenly nice and golden brown. Placed the cooked chicken on a plate lined with paper towels or a wired rack to drain off the excess oil. Serve and enjoy!
