Start by soaking the halved baby potatoes for 15 to 20 minutes. After this, drain and transfer them to a pot, then pour hot water. Season with salt and start parboiling. Once done, discard the water and transfer the potatoes to a bowl. (Place an empty baking tray in the oven and preheat oven to 400 degrees F at this point.) Add 2 sprigs of chopped rosemary, 1 tsp chili flakes, 1 1/2 tsp olive oil, and salt to taste. Stir gently to coat the potatoes.

Once done, place the potatoes on the hot baking tray, spreading them evenly, and keeping the cut sides down. Place the tray back into the oven and roast for twenty minutes at 400 degrees F. After this, drizzle 1/2 tbsp olive oil mixed with two cloves of minced garlic. Flip the potatoes, place them back in the oven, then roast them for additional twenty minutes. Serve and enjoy!
