Preheat the oven to 205 degrees Celsius.
Cut unsalted butter into cubes and keep them in the fridge until needed.
Pour salt and sugar into very cold water. Refrigerate until ready to use.
In a mixing bowl, mix 1cake flour, bread flour, or all-purpose flour until well combined. Add in the cubed cold butter and mix well. Add the cold water, sugar, and salt mixture and mix roughly. Place and cover the loose dough with plastic cellophane and stretch it using a rolling pin.
Let the dough rest in the fridge for 30 minutes.
Meanwhile, extract lemon juice and mix it together with sugar and as much cinnamon powder as you like.
Stretch the dough some more using a rolling pin and shape it into a diagonal square. 3 soft unsalted butter slices, are sliced and spread over the diagonal square of dough. Cover the diagonal dough with the excess triangles and spread and fold the dough 3 times. Cover the dough again with plastic cellophane and let it rest in the fridge for an hour.
Slice 2 apples into 4 to 5mm thick slices. Sprinkle sugar onto the apples and as much cinnamon powder as you like. Pour in the lemon juice and add 10g of rum and 20g of unsalted butter. Cook for 7 to 8 minutes in the microwave, covered with plastic cellophane. Make sure to let the red color seep out of the apple peels and leave them at room temperature for at least 5 hours.
Stretch out the dough again and spread 20g of unsalted butter. Cover the dough with a plastic cover and let it rest in the fridge for an hour.
Draw an apple on transparent film paper and cut it out. Remove the drawing mark with nail polish remover and wash it in running water.
Stretch out the dough again and add another layer of unsalted butter. Covered in plastic cellophane, let the dough rest again for an hour in the fridge. Repeat the stretching process of the dough again, cover it, and leave it in the fridge for another hour.
Roll the dough and push it out to a thickness of 3 mm. Cut the dough, guided by the apple shape of the transparent film, and place each one on a baking tray. Press the center of the apple-shaped dough firmly but leave 1 cm on the edges. Use a fork to poke holes in the pressed center.
Place some of the red juice with some apple jam and apply generously to the center of the apple. Add apple slices as follows. Mix 1 egg yolk with milk and apply it all over the dough
Place it in the fridge and let it bake for 15 minutes at 195C.
