Ingredients:

  • 1/4 cup all-purpose flour
  • 2 cups cornmeal
  • 2 tbsp sugar
  • 2 tsp kosher salt
  • 1 tbsp baking powder
  • 1 1/2 cups boiling water
  • 1 tbsp unsalted butter
  • 3 cups vegetable oil

Directions:

Step 1

Combine 2 cups cornmeal, 1/4 cup all-purpose flour, 2 tbsp sugar, 2 tsp kosher salt, and 1 tbsp baking powder in a large mixing bowl. Whisk well until thoroughly combined. Next, add 1 1/2 cups boiling water and carefully mix it all together. After this, stir in 1 tbsp unsalted butter while the mixture is still warm.

Step 2

Once everything is mixed up, go ahead and divide the mixture into eight equal portions using an ice cream scooper. Place them in a baking tray lined with parchment paper. Cover them with a cling wrap, slightly press them down, then pop them in the fridge for about an hour. Preheat 3 cups of vegetable oil to 350 degrees F, then carefully drop the chilled cornbread. Fry them for about three minutes on each side. Serve and enjoy.
