Ingredients:

  • 2 boxes of honey jiffy mix
  • 1/4 tsp baking powder
  • 1 medium-sized sweet potato
  • 2 large eggs
  • 3 tbsp melted butter
  • 2/3 cups milk
  • a dash of cinnamon (optional)
  • orange food coloring (optional)
  • avocado oil
  • nonstick cooking spray

Honey Butter Glaze:

  • 2 – 3 tbsp melted butter
  • 1/4 cup honey

Directions:

Step 1

Preheat your oven to 400 degrees F. Line your baking tray with aluminum foil, then place the sweet potato. Poke some holes all over it using a fork and drizzle some olive oil to cover the sweet potato. Bake it in the preheated oven for 30 to 45 minutes. In the meantime, prepare the other ingredients. In a large bowl, add 2 boxes of Jiffy mix along with 1/4 tsp baking powder, 2 large eggs, 3 tbsp melted butter, 2/3 cups of milk, and the softened sweet potato. Mix to combine using an electric mixer until smooth.

Step 2

Next, stir in a pinch of orange food coloring and a dash of cinnamon. Divide the mixture into a 6-cup muffin tray greased with nonstick cooking spray. Level the top nicely, then place it in the preheated 400 degrees F oven and bake for 15 to 18 minutes. While waiting, make the glaze by combining 2 – 3 tbsp melted butter and 1/4 cup honey in a small bowl. Once done baking, drizzle the glaze and serve.
