There are a lot of snack recipes made out of potatoes online but this one just hits different! I love how simple and easy they are to prepare, they also get done pretty quick, and most of all, it has the perfect balance of saltiness and cheesiness. It is so crispy and just mouth-watering, I just can’t get enough of it. Thanks to Cafe Delites on YouTube for this yummy recipe.
Step 1
In a small mixing bowl, mix together the melted butter, crushed garlic, and freshly chopped parsley until uniform and well combined, then set it aside. Place a large pot on a stove over medium-high heat, fill it with water, then add the potatoes and a bit of salt, and cover. Bring it to a boil and for about 30 to 35 minutes or until fork-tender, then drain off excess water. Lightly grease a large baking sheet or tray with cooking oil spray, then place the potatoes on the sheet arranging them in a single layer, and lightly flatten them into one piece using a potato masher.

Step 2
Do not press them too much. Pour the butter mixture over each potato, then season them with salt and pepper, and lightly spray with olive oil. Put it in a preheated oven at 400°F and broil them for about 10 to 15 minutes or until they are golden and crispy. Remove them from the oven, then sprinkle them with parmesan cheese, and then return them to the oven. Broil them just until the cheese is nice and melted. Season them with a little extra salt and parsley, then serve immediately.
