Remove the cooked onions from the skillet and keep the skillet on low heat while the second batch of potatoes finishes in the microwave. Next, give your fire-roasted bell peppers a rough chop (if you’re using fresh bell peppers, dice them). Once the second batch of potatoes is done, add another tablespoon of oil to the skillet over medium-high heat. When the oil is hot enough, add the microwaved potatoes. Cook the potatoes until the edges are golden brown and crispy, then add the onions and bell peppers. Stir it and heat these through for about a minute or two. Season with salt and pepper to taste and serve.
