Ingredients:

  • 1 cauliflower, chopped
  • 1 bell pepper, diced
  • 3 carrots, diced
  • 1 zucchini, diced
  • olive oil
  • salt and ground black pepper, to taste

Cream Mixture:

  • 1 cup of sour cream
  • 1 cup of heavy cream
  • 1 1/2 cups of mozzarella cheese, shredded
  • chopped Italian parsley (optional)

Directions:

Step 1

Preheat your oven to 450 degrees F. Next, chop the veggies, place them in a casserole dish, drizzle some olive oil, and season with salt and ground black pepper to taste. Mix well, then roast them in the preheated 450 degrees F oven for fifteen minutes, or until tender.

Step 2

In the meantime, combine 1 cup of sour cream, 1 cup heavy cream, and 1 cup shredded mozzarella cheese. Mix well to combine. Once the veggies are done roasting, remove the casserole from the oven, then pour the cream mixture over the top. Mix them well, and sprinkle some more shredded mozzarella cheese on top. Place it back in the oven and bake for fifteen more minutes or until golden on top. Garnish with some freshly chopped parsley. Serve and enjoy!
