Ingredients:

  • 2 tablespoons Olive or avocado oil
  • 1 pound Italian sausage, ground
  • 1 medium Onion, chopped
  • 2 ribs of celery, diced small
  • 3 small Carrots, chopped small
  • 2 teaspoons Garlic, minced
  • 1/8 tsp each of salt & pepper, to season vegetables
  • ¼ cup All-purpose flour
  • 1 tablespoon Butter
  • 6-8 cups Chicken broth
  • 1 (16 ounces) package Dry uncooked cheese tortellini
  • 6 ounces Fresh spinach, chopped
  • 2 cups Half and half, heavy whipping cream or milk

Directions:

Step 1

Heat the oil in a large pot over medium to medium-high heat. Put the ground sausage and break them up, once it started browning, add the onions, celery, and carrots. Let it cook for about 4 minutes or until the vegetables have partially softened. Season it with a pinch of salt and pepper, then add in the minced garlic, stir it well for 30 seconds. Add the flour and butter to the pot, then stir it for a minute, just enough to coat the vegetables, and let the flour’s rawness cook.

Step 2

Pour the chicken broth, give it a good stir, and increase the heat to high, bring it to a boil then add the tortellini, stir it well then season with salt and pepper to taste. Let it simmer over medium-high heat covered until the tortellini is cooked through and tender. Turn off the heat once the tortellini is done cooking, then pour in the half and half, stir until well combined. Add the spinach, season with more salt and pepper if needed, then serve once the spinach has wilted.
