Ingredients:

  • 2 pounds of zucchini or yellow squash
  • ¼ tsp salt or to taste
  • 1 tbsp paprika
  • 2 tbsp olive oil

For the sauce

  • 1 cup coconut milk
  • ⅛ cup fresh parsley, chopped
  • ⅛ cup fresh basil, chopped
  • 1 tbsp tomato paste
  • 2 cloves garlic, minced
  • ¼ tsp salt or to taste
  • ⅛ tsp red pepper flakes or to taste

Directions:

Step 1

The first thing that you have to do is to make sure that your zucchinis are rinsed and clean, then start slicing them into medium-sized cubes. Place the sliced zucchinis on a baking sheet, then season them with salt, paprika, and olive oil. Toss them around until well seasoned, then spread the cubed zucchinis out in a single layer. Pop them in a preheated oven at 400°F and let them bake for about 25 minutes.

Step 2

While waiting for the zucchinis to cook, place a large skillet pan or a pot on a stove over medium heat. Pour the coconut milk, then add the parsley, basil, tomato paste, garlic, salt, pepper, and red pepper flakes. Give them a good stir, then bring the mixture to a gentle simmer. Now, add the baked zucchini cubes into the sauce mixture, then stir them together until well combined. Turn off the heat and then serve.
