Ingredients:

  • 1/2 box of bow-tie pasta
  • 10 – 12 cremini mushrooms, sliced
  • 2 cups of chopped broccolini
  • 1/2 tsp onion powder
  • salt + black pepper (to taste)
  • 2 tbsp vegan butter
  • 2 heaping tbsp of flour
  • 3 cups of almond milk
  • 2 sage leaves
  • 1 cup of pumpkin puree
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp nutmeg

Directions:

Step 1

To start, cook the pasta according to its package directions. In the meantime, slice the mushrooms and broccolini, and saute them in water in a large pan. Season the veggies with some salt, ground black pepper and onion powder. Continue cooking until the mushrooms are softened, then set aside. Next, in another pan, add 2 tbsp vegan butter and 2 heaping tbsp of flour. Cook together until flour is no longer visible, then add two sage leaves and 3 cups of almond milk (add the almond milk 1 cup at a time.) Mix well and let it simmer for ten minutes.

Step 2

Next, add 1 cup of pumpkin puree and stir well. Season with 1/2 tsp ground black pepper and 1/4 tsp nutmeg. Let it simmer to thicken up (about ten minutes), then add the cooked pasta and the veggies. Toss everything well and serve. Enjoy!
