Ingredients:

  • 3 tbsp butter
  • 1/2 of white onion, thinly sliced
  • 1 tsp kosher salt, divided
  • 3 cloves of garlic, minced
  • 1/2 tsp red pepper flakes
  • 1/4 tsp nutmeg
  • 2 tbsp flour
  • 1 cup vegetable stock
  • 3/4 cup heavy cream
  • 3/4 cup parmesan cheese, grated
  • 20 oz frozen spinach, thawed
  • 2 tsp fresh lemon juice
  • 4 eggs

Directions:

Step 1

Melt butter in a large cast-iron skillet, then add thinly sliced 1/2 of white onion and 1/2 tsp kosher salt. Saute until the onion becomes translucent. After this, add 3 cloves of minced garlic, 1/2 tsp red pepper flakes, 1/4 tsp nutmeg, and 2 tbsp flour. Mix well until the flour combines, then add 1 cup of vegetable stock and 3/4 cup heavy cream. Mix well. When bubbles start forming, add 3/4 cup of grated parmesan cheese and 1/2 tsp kosher salt and mix. After the sauce thickens, add the thawed frozen spinach followed by 2 tsp fresh lemon juice. Mix until well combined, then turn off the heat.

Step 2

Using the back of a measuring cup, make four wells on the spinach, then cracked an egg on each hole. Sprinkle some ground black pepper and parmesan cheese on top of each egg. Cover the skillet with a lid and cook for five minutes on medium heat. Then, broil it for three minutes.
