I’m a big pasta fan, and this creamy mushroom pasta from Sip and Feast on Youtube is one of my favorites. The flavorful sauce of this pasta is off the charts, and your family will definitely love this! It’s also pretty quick and easy to make and perfect if you want to impress during dinner. To start, prepare all your ingredients and chopped them accordingly. Next, heat a large pan over medium heat, then add 3 tbsp olive oil. Add the mushrooms and sear them on both sides for three minutes or until they are browned. Once they are browned, season them with some salt and pepper. Set them aside. Next, in the same pan, put the onion in and reduce the heat to medium-low. Add more olive oil if the pan is dry and cook the onion until soft and translucent. After this, add 3 oz of tomato paste and fry the paste in the oil for 5 minutes. (You can now boil the spaghetti pasta at this point.)

Now, turn the heat to about medium-high, then put 1 cup of brandy into the pan. Scrape the brown bits off the bottom of the pan. Once the liquid reduces by about half, lower the heat to medium-low and put in 1 & 1/4 cups of heavy cream, and bring it up to a simmer. Now, after the pasta water boils, get a cup or two and add it to the sauce. Taste-test the sauce at this point and season accordingly, then add the spaghetti pasta and mushrooms into the sauce, then toss them with tongs. Turn off the heat and add the cheese and parsley.
