Soup season is definitely my favorite time of the year, and with this season; comes great soup recipes to try! This homemade potato soup from Inspired Taste on Youtube is definitely one of my favorite recipes. It’s creamy, easy, and comes together quickly. This soup will definitely warm up the dinner table, and your family will love it. Watch the video below to learn the full recipe.

Ingredients:

  • 3 tbsp butter or olive oil
  • 2 cups chopped onion (1 medium)
  • 1 cup chopped carrot (2 medium)
  • 1 cup chopped celery (2 to 3 stalks)
  • 1 tbsp minced garlic (3 cloves)
  • 1 tsp chopped fresh rosemary (or 1/4 tsp dried rosemary)
  • 1/4 tsp crushed red pepper flakes
  • 3 tbsp all-purpose flour
  • 4 cups chopped potatoes, cubed (1 & 1/2 lb or 3 to 4 medium)
  • 1 bay leaf
  • salt and fresh ground black pepper
  • 1/4 cup cream, half and half, sour cream, or plain yogurt
  • 1 cup (2 oz) shredded cheese (like sharp cheddar or gruyere, optional)
  • chopped parsley, chives, or scallions for serving (optional)

Directions:

Step 1

To start, prepare and chop the celery, carrots, and onion accordingly. Mince your garlic as well as the rosemary. Next, heat 3 tbsp butter or olive oil in a deep soup pot over medium heat, then add the chopped onions, carrots, and celery. Cook, stirring occasionally until they begin to soften. While waiting, chop your potatoes. After this, stir in the garlic, rosemary, red pepper flakes, salt, and black pepper.

Step 2

Scatter flour over the veggies and cook until it looks medium blonde in color, then stir in half of the stock, making sure there aren’t any lumps of flour. After this, pour in the remaining stock and add a bay leaf. Stir in the potatoes, then cook, partially covered, until the potatoes are fork-tender. When the soup is done, remove the bay leaf, then serve or you can make it extra creamy and stir in some cream. You can also add a handful of shredded cheese to make it a cheesy soup.
