You can never go wrong with this creamy garlic chicken recipe by Cooking With Claudia. In a small bowl, add salt, pepper, paprika, thyme, and rosemary. Mix all spices. Season both sides of the chicken with them. Gently pat them so the seasonings will stick to the chicken.
Wrap the chicken with a cling wrap and let it marinate for at least 30 minutes.
Drizzle some oil on a cast iron pan and place over medium heat. Once the oil is extremely hot, place the chicken thighs with the skin side down. Let the chicken sear for 3 minutes on one side then flip them and sear for another 3 minutes until golden brown. Once done, take them out of the pan and set them aside.
Get rid of the burnt bits on the pan. Next, add the butter and let it melt. Once melted, add the onion and cook for 5 minutes until it caramelizes a little. Then add the garlic and cook for 1 minute. Next, add the flour and mix. Pour the chicken broth and mix continuously until it thickens.
Add the whole milk and heavy cream into the sauce. Whisk all ingredients well. Next, add parmesan cheese, chicken bouillon, fresh basil, and fresh parsley. Mix everything in and let the sauce cook for about a minute to bring out the flavors. Then add the chicken and the juices from the plate. Cover the chicken with the sauce.
Place in the oven and bake at 400 degrees F for 45 minutes. Check the internal temperature of the chicken and make sure it’s from 165 to 175 degrees. Once done, remove from the oven and serve on a plate. Enjoy!
