Preheat the oven to 400 degrees F. Next, slice down one whole garlic in the middle and peel some skin off. After this, drizzle some olive oil and some salt and pepper on it, then wrap it nice and tight in aluminum foil. Place it in the preheated oven for about 40 minutes. Next, dice the green and red bell pepper into bite-size pieces as well as the onion. After this, season the chicken breasts with all-purpose seasoning (a blend of salt, pepper, garlic, and onion powder). In a pot with boiling water, add a bit of salt, then add the pasta noodles. Next, in a skillet over medium-high add some avocado oil, then gently place the chicken breast into the skillet. Cook each side for about two to three minutes. Baste it with 2 tbsp butter (this is optional). After this, place the chicken in the oven at 400 degrees F for about 8 to 10 minutes.

While waiting for the chicken, go ahead and start making the sauce. In a skillet over medium heat, melt 2 tbsp butter then toss in the diced bell pepper and onion. Saute the veggies and season them with all-purpose seasoning. When the veggies are nice and tender, add the roasted garlic by mashing it into the mixture. Next, add 2 & 1/2 cups of heavy cream. (Increase the heat to medium-high at this point.) Simmer the sauce while stirring with a spatula to make sure nothing is sticking to the bottom. After it simmered, add 1 can of chipotle peppers in adobo but just the sauce. Stir it. Decrease the heat to low, then add in 1 cup of shredded parmesan cheese and 1/2 cup of grated parmesan cheese. Mix the sauce until the cheese melted. After this, add in the pasta and 1/4 cup of pasta water. Also, add some grated parmesan cheese and mix them well to combine. Sprinkle with some chopped fresh parsley and red pepper flakes to pop some color. Next, after the chicken is rested for about five to six minutes, slice the chicken. Lastly, plate the pasta with the chicken on top.
