Ingredients:

  • 3 chicken breasts, 10 boneless & skinless thighs or fillets
  • 2 cups of sliced button mushrooms
  • 1 medium-sized leek, sliced
  • 1 tsp minced garlic
  • 1 tbsp fresh tarragon
  • 1 tsp dried sage
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp English mustard
  • 1 tsp wholegrain mustard
  • 1/7 cups chicken stock
  • 1 cup double or heavy cream
  • 2 tbsp creme fraiche

Directions:

Step 1

Add 1 tsp salt to a pan along with 1/2 tsp black pepper and some boiling water. Add the chicken and let them poach for 20 minutes covered. In another pot, add cold water, then dump your chopped potatoes along with a little salt. Boil them until tender. Back to the chicken, drain the stock, then remove the chicken and set them aside. In the same pan, melt 1 tbsp of butter, then add 2 cups of chopped mushrooms. Saute for five minutes, then add the sliced leek. Continue to cook them until soft. Next, add the minced garlic, the cooked chicken, and 1 tbsp butter. Mix everything well until the butter has melted. After this, add 1 tbsp freshly chopped tarragon, 1 tsp dried sage, 2 tbsp all-purpose flour, 2 tsp mustard, 1/7 cups chicken stock, 1 cup cream, and 2 tbsp creme fraiche. Stir everything well and let it simmer for ten to fifteen minutes covered.

Step 2

Back to the potatoes, drain them once tender, then add 1 tbsp butter and a splash of cream and milk. Mash them until smooth. Now, assemble the casserole. Pour the chicken mixture into your casserole dish and top it with dollops of your mashed potatoes. Grate some cheese over the top and bake at 425 degrees F oven for 25 minutes.
