Easy Cranberry Bread With Orange Glaze

  • 1 1/2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/4 cup of milk (room temperature)
  • zest of 1 large orange (reserve 1 teaspoon for the glaze)
  • 1/4 cup of orange juice (freshly squeezed)
  • 6 tablespoons of unsalted butter (softened)
  • 3/4 cup of granulated sugar
  • 2 large eggs (room temperature)
  • 1 1/2 cups of fresh cranberries
  • 1/2 tablespoons of flour

Orange glaze:

  • 1 cup of powdered sugar
  • 1 1/2 tablespoons of freshly squeezed orange juice
  • 1 teaspoon of orange zest

How to Make Orange-Glazed Cranberry Bread

Step 1:

Start by preheating your oven to 350F. Butter an 8 1/2 by 4 1/2 bread loaf pan, then dust it with flour. Make sure to tap out excess flour.

Step 2:

In a medium bowl, add the flour, baking powder, and salt. Whisk together then set aside.

Step 3:

Get a measuring cap and add milk, zest of the orange (reserved teaspoon not included), and orange juice. Combine well.

Step 4:

In a large mixing bowl, add butter and granulated sugar. Cream together on medium/high speed until just combined. Add in 2 large eggs and mix until well incorporated.

Step 5:

Add flour mixture in 2 batches, alternating with the milk mixture. Mix on medium/low speed with each addition. Make sure to scrape the sides of the bowl with a spatula.

Step 6:

Add the cranberries into a bowl and coat with 1/2 tablespoon of flour. Fold them into the batter. Transfer your batter to the prepared pan and spread evenly. Place inside the oven and bake for 45 to 50 minutes at 350F until the top is golden and a toothpick comes out clean when inserted into the center.

Step 7:

Once done baking, let the cake cool in the pan for about 10 to 15 minutes then run a knife around the edges to transfer it to a wire rack. Let it cool completely.

Step 8:

In a mixing bowl, mix powdered sugar, orange juice, and reserved teaspoon of zest. Stir until smooth. If it’s too thick, add more orange juice, and if it is too thin, add more powdered sugar.
