Ingredients:

  • 36 oz chicken breasts, roughly
  • ⅓ cup apple cider
  • ⅔ cup barbecue sauce, of your choice
  • 2 tbsp lemon juice, lime juice
  • 2 tbsp apple cider vinegar
  • 2 tsp dried rosemary
  • 2 tsp dried thyme
  • 1 tbsp garlic powder
  • 1 tsp dried basil
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • cooking spray

Serve with:

  • 1 cup roasted carrots
  • ¾ cup sauteed corn kernels

Directions:

Prepare all the needed ingredients.

In a large mixing bowl, combine 2 tbsp of apple cider vinegar, 1/3 cup apple cider, 2 tsp dried rosemary, 2 tbsp lemon or lime juice, 1 tbsp garlic powder, 2 tsp dried thyme, 1 tsp dried basil, and 2/3 cup barbeque sauce of your choice.

Mix all the ingredients until well combined.  Add 1/3 tsp pinches of salt and 1/ 4 tsp ground black pepper. Mix well until incorporated.

Next, add in 36 oz of boneless, skinless chicken breasts. Marinade well until all the seasonings are coated and incorporated into the chicken.   Set aside, wrapped in plastic wrap.Let the chicken marinate in the fridge overnight.

Let the chicken cool down to room temperature before grilling.

On the griller, grill each side of the chicken for 3-5 minutes until the juices run clear and no pinkness is present.

When done, place in a platter and serve with 1 cup of roasted carrots and ¾ cup sauteed corn kernels.
