To start, prep and chop all your veggies accordingly, as well as the shrimp. Next, put the shrimp into a bowl and season with some all-purpose and lemon bae seasoning. Mix well. After this, add 1/2 tbsp cooking oil and 2 tbsp of butter in a large pan. Once the butter melts, cook the shrimp until brown on both sides. Set them aside afterward, then melt some more butter in the same pan. Saute the chopped bell pepper, jalapenos, and onions until tender. Season them with all-purpose seasoning, cajun seasoning, chili powder to taste, and 1 tbsp of garlic paste. Mix well, then add 2 tsp of all-purpose flour. Continue to mix until the flour is no longer visible.

Next, deglaze the pan with 1/2 cup of dry white wine, then add 1 1/2 pints of heavy cream and 1 tsp lemon juice. Bring everything to a simmer, then turn off the heat. Lastly, stir in the parmesan cheese, then the Monterey Jack cheese. Taste test at this point and adjust the seasonings according to your liking. Now, chop your tortillas into little triangles, and deep fry them for a minute or two or until brown. Once done, remove them from the oil and cool them down on a rack. Sprinkle with a little bit of salt.
Once the tortilla chips cooled down, transfer them to a plate and top them with some shredded cheese, then place on a preheated 400 degrees F oven and bake until the cheese melts. After baking, remove from the oven, then place some jumbo lump crab meat over, followed by the shrimp, then drizzle the cheese sauce over everything. Serve and enjoy!
