This corned beef and potato pie by John Kirkwood on YouTube is an affordable meal that you can make from scratch. It’s a savory pie that would go along well with a side salad or steamed veggies. Corned beef can be a hit or miss for certain people, but I do like the salty flavors from it. Also, it depends on how it is prepared. I’ve never had a savory pie like this before besides chicken pot pie. It’s interesting how it’s a meat pie, but it looks filling.

  • 12 oz plain or all-purpose flour
  • 3 oz cold butter
  • 3 oz cold lard or shortening
  • 1/2 tsp Salt
  • 4 oz of cold water
  • 1 small egg (wash)

The filling:

  • 2 lb Potatoes (suitable for mashing)
  • 12 oz tin of Corned beef
  • 1 oz Finely chopped spring onions
  • 1/4 tsp White pepper
  • 1/2 tsp Salt

First, make the filling by peeling and boiling the potatoes. In the meantime, make the pastry by putting the flour, butter, and shortening or lard into a food processor. Pulse until it resembles fine breadcrumbs. Add cold water, and when the pastry forms into a ball, it is done. Cool the dough for at least 30 minutes before using it. Next, once all of the components are finished, assemble the pie with the pastry and filling. Brush the whole surface of the pie crust with an egg wash and poke vent holes on top with a fork. Bake in a preheated oven at 375F for 30 minutes.
