Ingredients:

  • 1 cup unsalted butter, cut into 8 pieces
  • 1 cup water
  • 1/3 cup cocoa powder
  • ½ cup sour cream
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1½ cups granulated sugar
  • ½ cup light brown sugar, firmly packed
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ teaspoon instant coffee, optional

Frosting

  • 6 tablespoons whole milk
  • ½ cup salted butter cut into pieces
  • 6 tablespoons natural cocoa powder
  • 4 cups powdered sugar, sifted
  • ¾ teaspoon vanilla extract
  • 1 cup toasted pecans, optional

Directions:

Step 1

Grease your jelly roll pan thoroughly with baking spray, then cover it with flour, and set it aside. Place a medium-sized saucepan on a stove over low heat, then add the butter, water, and cocoa powder. Stir them occasionally and let them cook until the butter is melted, then increase your stove’s heat setting to medium, and bring it to a boil. After it has boiled, remove the saucepan from the heat, then let the mixture cool for about 15 to 20 minutes. In a separate mixing bowl, whisk together the flour, sugar, baking soda, salt, and instant coffee. Grab another mixing bowl, then whisk the sour cream, eggs, and vanilla together until well combined.

Step 2

Stir in the dry ingredients gradually in batches until fully combined and smooth. Add in the cooled chocolate mixture, then mix them until well combined. Spread the batter into the pan and pop it in a preheated oven at 350°F, then let it bake for about 18 to 22 minutes. A few minutes before the cake is done baking, prepare your frosting. Simply combine the milk and butter in a saucepan over medium or low heat, then cook them until the butter has melted. Remove from heat, whisk in the cocoa powder, add powdered sugar, and vanilla extract, then mix them until well combined and smooth. Pour the frosting over the warm cake, then allow the frosting to harden for about an hour, and serve!
