In a medium bowl, combine coffee and 1/2 cup of dark rum. Set aside. If you are not a fan of rum, you can remove it and add a dash of vanilla with some more coffee for soaking.
Add the mascarpone to a large mixing bowl, then pour 1/4 cup of dark rum. Mix everything together until well combined.
Add the egg yolks and sugar to a double boiler or glass bowl. Combine them with a whisk then place them over a pot of simmering water. Make sure the water does not touch the bowl. Whisk until the sugar dissolves and it turns light yellow.
Transfer the egg yolk mixture to the mascarpone and whisk until well combined.
Add the cold cream and vanilla extract to the bowl of the stand mixer with a whisk attachment. You can also put it in a large bowl and use an electric hand mixer. Mix it on low setting for about 30 seconds, then slowly increase speed to high. Beat until the whipped cream stiffly peaks. Be sure to keep an eye on it.
Fold the whipped cream into the mascarpone mixture.
Get the lady fingers and briefly dip the top and bottom in the coffee mixture for just 2 seconds. Arrange them in a 9 x 13 dish. There should be no gaps between each piece.
Add half of the mascarpone mixture on top and smoothen out the edges with an offset or rubber spatula.
Add another layer of dipped lady fingers, then add the remaining mascarpone mixture. Smoothen it.
Dust the top with cocoa powder, then place it in the refrigerator. Let it chill overnight.
