It’s one of my favorite bread recipes as it’s not so easy to put together but is also healthy and delicious. My family loves this and it’s a great way to add a touch of zucchini to my kids’ meal. Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2/3 cup light brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking soda
  • 3/4 tsp table salt
  • 1/2 cup cocoa powder
  • 1 tsp instant coffee
  • 1/2 cup steaming hot water
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, lightly beaten
  • 1 1/2 tsp vanilla extract
  • 2 cups grated zucchini
  • 1 1/2 cups semisweet chocolate chips

Directions:

Step 1

Preheat your oven to 350 degrees F. Next, add 1 1/2 cups of all-purpose flour to a large mixing bowl followed by 2/3 cup light brown sugar, 1/2 cup granulated sugar, 1 1/2 tsp baking soda, and 3/4 tsp table salt. Whisk everything well until combined and set aside. Prepare a 1/2 cup steaming hot water, then add 1/2 cup cocoa powder and 1 tsp instant coffee. Mix well. Next, add 1/2 cup melted unsalted butter, 2 lightly beaten eggs, and 1 1/2 tsp vanilla extract.

Step 2

Continue mixing until combined. Now, add the chocolate mixture right to the dry mixture and gently fold together the ingredients. Lastly, stir in 2 cups of grated zucchini and 1 1/2 cups semisweet chocolate chips. Transfer the mixture to a parchment paper-lined loaf pan. Place it in the center rack of the preheated oven and bake for 85 to 90 minutes. After baking, let it cool for at least 30 minutes before removing it from the pan.
