A combination of your two favorite desserts? Why not? Give in to your sweet cravings with this ooey gooey chocolate chip s’mores cookie bars by Honeysuckle! These treats are heavenly – you’ll make them repeatedly. They are super easy to make and only need a couple of ingredients. Try this at home – I’m sure you won’t regret it. In a large bowl, add brown sugar, white sugar, and melted butter. Mix until well combined, then add one egg and an egg yolk. Mix again until smooth and glossy.
Add kosher salt, baking soda, and vanilla extract to the mixture. Mix again, then add flour, mini marshmallows, chocolate chips, and crushed graham crackers. Fold everything together until well combined.
Transfer the mixture to an 8 by 8 baking pan lined with parchment paper, then bake it at 350 degrees for about 6 to 7 minutes or just until it’s barely cooked. The top should start to look firm.
Remove it from the oven, then add another layer of marshmallows and chocolate chips. Place it back into the oven and bake for another 5 to 6 minutes or until it’s golden brown and puffy. The time depends on your oven, some will take a lot longer to be ready. To achieve a firmer texture, you should bake it a few minutes longer.
After baking, take it out of the oven and let it cool for about 10 to 15 minutes. If you want them to be firmer, let them cool for about an hour. Slice it into bars, serve, and enjoy!
