Prepare all the needed ingredients and measure as per the list above.
Pat dry the cut pork loin with a paper towel. Season the pork by rubbing it with minced garlic, kosher salt, and freshly ground black pepper.
Preheat the sauté pan. Once hot, heat the olive oil and sear the seasoned pork loin on all sides for 3 minutes.
Place the largely diced sweet potatoes in the bottom of the slow cooker and place the seared pork loin on top of the sweet potatoes.
In a small mixing bowl, combine orange juice, orange wedges, diced tomatoes, chipotle peppers, and chopped adobo.
Mix all the ingredients until well combined, and then pour over the pork loin.
Cook the pork for 4 hours on low pressure.
When ready, remove the pork loin and rest it on a sheet pan with a wire rack. Add the green beans and cook on low for another 5 minutes in the slow cooker. Once the green beans are tender, remove them from the slow cooker and serve with the sliced pork loin.
