Start by mincing the cilantro and dicing the jalapeno and red onion.
Cut the tomatoes in rounds, then lay them flat on your cutting board. Slice each round into long strips, then rotate them and dice. Place on a colander or strainer, then rinse them in cold water. Let them sit for 30 minutes in the strainer or colander.
Transfer the diced tomatoes to a bowl then add one tablespoon of lime juice. Next, add diced onion, minced cilantro, diced jalapenos, and 1 teaspoon of kosher salt. Mix everything until well combined.
