Ingredients:

  • oil for frying
  • 10 flour tortillas
  • 1 1/2 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 1/2 cup of chicken broth
  • 16 oz sour cream (or crema fresca)
  • 4 cups of melty cheese (1 cup is used for sauce)
  • 1 medium onion, sliced
  • 3 cups of shredded chicken
  • 4 roasted poblano peppers (1 pepper to top casserole)

Directions:

Step 1

Get your pan over medium heat and saute the sliced onions until softened. In another pan, heat enough oil for deep frying. Take ten tortillas, slice them into strips, then fry them until crispy. Once done, set them aside. Now, place another pan on medium heat, and add 1 1/2 tbsp butter. Once it melts, add 1 tbsp of all-purpose flour. Whisk and cook for 15 to 20 seconds. After this, add 1 1/2 cup of chicken broth. Whisk until the roux dissolves, then add 16 oz of sour cream. Keep on mixing until all ingredients are combined. Next, mix in 1 cup of melty cheese. Once the cheese melts, turn off the heat, and add the sauteed onions, 3 cups of shredded rotisserie chicken, and 3 roasted and chopped poblano peppers. Combine everything well.

Step 2

Now, start assembling the casserole. Place the fried tortilla strips at the bottom of the casserole as evenly as you can, then place the first layer of your chicken mixture. Next, sprinkle some more melty cheese, add another layer of fried tortilla strips, then the remaining chicken mixture. Now, crumble the last batch of fried tortillas and add them over the top along with some more cheese, and one roasted and chopped poblano pepper. Cover the casserole with a foil and bake it at 380 degrees F oven for 20 minutes. After 20 minutes, remove the foil, and continue to bake for another four to five minutes.
