Cut the chicken breasts lengthwise into cutlets, lay them down, then cover them with a sheet of plastic wrap. Pound them flat with a meat mallet until even half-inch thickness. Once done, season both sides with 1/2 tsp fine sea salt, 1/2 tsp freshly ground black pepper, and 1/2 tsp garlic powder. Next, heat a large skillet over medium heat, then add 1 tbsp olive oil. Lay the chicken breasts in a single layer and cook them for about three to four minutes on the first side then flip them over. Brush the cooked side generously with BBQ sauce. Cook for another three to four minutes, then flip them over again and brush the other side.
Once the chicken reaches 165 degrees F, take them off the heat. Brush the chicken breasts again with BBQ sauce, then top each with crispy cooked bacon. Combine 1/2 cup shredded Monterey Jack cheese and 1/2 cup shredded cheddar cheese in a small bowl and divide them evenly between each chicken. Now, place the chicken in the oven and broil for three minutes or until the cheese fully melts. After broiling, garnish the chicken with diced tomatoes and chopped green onions. Serve and enjoy!
