Ingredients:

For the Chili:

  • 1 lb ground beef
  • 2 tbsp cooking oil
  • 1 medium yellow onion, diced
  • 1 small bell pepper, diced
  • 2 cloves of garlic, minced
  • 3 tbsp tomato paste
  • 1 tsp of salt, or to taste
  • ground black pepper, or to taste
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 – 14 oz can of crushed tomatoes
  • 1 cup of beef broth
  • 1 – 15 oz can of bean of choice, drained

For the Cornbread:

  • 1 cup yellow cornmeal
  • 1 cup of all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp of salt
  • 1/3 cup white sugar
  • 2 eggs
  • 1 1/2 cups of milk
  • 8 tbsp of butter, melted

Directions:

Step 1

Preheat the oven to 375 degrees F. Next, add 2 tbsp cooking oil and saute the chopped yellow onion and diced bell pepper for three to five minutes in a skillet over medium heat. After this, add the ground beef and continue cooking for about eight to ten minutes. Once the meat browns, remove the grease, add the minced garlic, and cook for 30 seconds. Season everything with 1 tsp of salt, ground black pepper, 1 tbsp chili powder, 1 tsp ground cumin, 1 tsp dried oregano, 1 tsp onion powder, and 1 tsp garlic powder. Mix well, then add 3 tbsp tomato paste, one can of crushed tomatoes, 1 cup of beef broth, and a can of beans. Mix everything well until combined and simmer for ten minutes.

Step 2

While waiting, make the cornbread. Combine 1 cup of yellow cornmeal, 1 cup of all-purpose flour, 1 tbsp baking powder, 1/2 tsp of salt, and 1/3 cup white sugar in a bowl. Mix together, then add the wet ingredients: 2 eggs, 1 1/2 cups of milk, and  8 tbsp of melted butter. Give everything a good mix, then pour it over the chili. Bake this in the preheated oven for 40 minutes. Serve and enjoy!
