Ingredients:
- 2 chicken breasts, large (boneless, skinless)
- 1/2 tsp salt
- ground black pepper
- 1/4 cup flour
- 1 tbsp unsalted butter
Mushroom Sauce:
- 2 tbsp unsalted butter
- 10 oz mushrooms, sliced
- 2 garlic cloves, minced
- 1/4 cup dry white wine (or chicken stock)
- 1/2 cup chicken or vegetable stock, low-sodium
- 1 cup heavy cream, thickened and full-fat
- 1/2 cup parmesan, grated
Serving:
- 2 tbsp finely sliced chives
Directions:
Step 1
Slice your chicken breasts in half horizontally, sprinkling some flour on both sides, then season with salt and ground black pepper. Next, melt 1 tbsp unsalted butter on a pan over medium-high heat, then cook each side until golden brown. Set them aside. In the same pan, melt 2 tbsp unsalted butter, then add the sliced mushrooms. Saute for four minutes or until the edges are browned. Next, add the minced garlic and a pinch of salt, sauteing for another minute, then pour 1/4 cup dry white wine. Deglaze for 30 seconds, scraping the bottom of the pan.

Next, add 1/2 cup of low-sodium chicken stock, cook for a minute, then add 1 cup of full-fat heavy cream. Mix and simmer for two minutes, until the sauce thickens, then stir in 1/2 cup grated parmesan. Mix well until the parmesan is fully incorporated, then add the chicken back to the pan. Garnish with finely sliced chives, then serve.
