It is probably one of my family’s favorite dinner recipes because it’s filling, flavorful, and comforting. The chicken and rice are perfectly seasoned and cooked–there’s nothing more you can ask for. Season the chicken with garlic powder, adobo seasoning, and black pepper. Mix until well combined.
Place a pan over medium heat and add olive oil. Once hot, add the seasoned chicken in one single layer, spacing each piece. Do not overcrowd the pan. Do it in batches if needed. Cook until browned on all sides. Set aside.
In the same pan, add the butter and garlic. Saute for 2 to 3 minutes. Make sure the butter doesn’t burn. Stir in white wine, lemon juice, and salt. Turn the heat to medium-high and simmer for 5 minutes. Stir occasionally.
Once it starts to reduce, take 2 tablespoons and reserve for later. Add the rice to the pan and cook for 3 to 4 minutes until it starts to brown.
Once it starts to turn brown, add the chicken broth and salt to taste. Bring it to a low boil. Once it reaches a low boil, place the lid and reduce the heat to medium-low. Cook for 15 to 20 minutes. Stir 2 to 3 times while cooking.
Turn off the heat, and sprinkle shredded parmesan cheese. Place the chicken on top and drizzle the reserved butter garlic sauce. Garnish with more parmesan cheese and some herbs. Remove from heat and let it sit for 5 minutes.
