In a pot, add 4 cups of water, 1/2 teaspoon of garlic powder, 1 teaspoon of salt, 1/2 teaspoon of ginger powder, and the chicken. Mix it well. Then let it boil for about 15 minutes.
After 15 minutes, flip the chicken over and let it boil for another 15 minutes. Once done, remove the chicken and set the broth aside.
Let the chicken cool completely. Once cooled, remove the skin and pull the chicken.
Add 1 teaspoon of oil into a pot then add 1 tablespoon of unsalted butter. Once the butter is melted, add the chopped garlic. Saute for 5 to 6 seconds then add the chopped onions. Next, add the grated carrots and cook until softened. Add 1 tablespoon of all-purpose flour and fry it for 1.5 to 2 minutes or until the smell of the flour is gone.
Pour the chicken broth into the pot and mix. Let it simmer then add soy sauce, tomato ketchup, black pepper, and salt. Stir and let it boil. Add the shredded chicken and mushroom. Mix then boil it for 2 to 3 minutes or until the mushroom is cooked. Then add the coriander leaves. After mixing, turn off the heat.
