Some may think that cordon bleu is hard to make since it evokes images of gourmet dining, but it’s easy. Plus, it only requires a few simple ingredients. The cheese and ham are wrapped with chicken, then breaded and deep-fried until the cheese is melted and the outside is golden brown and crispy. You can serve it with air fryer asparagus, steamed broccoli, buttered corn, rice, salad, mashed potatoes, or green beans.
For the chicken:
For the dijon sauce:
Season the chicken with salt, pepper, garlic powder, and onion powder on all sides.
Place a chicken breast between two sheets of plastic wrap and put on your cutting board. Pound until about 1/2 inch thick.
Remove the plastic wrap and add a layer of Swiss cheese, followed by ham, and another layer of Swiss cheese.
Roll the chicken and place onto a new sheet of plastic wrap. Wrap it, then twist the excess on the sides. Roll the chicken while twisting the sides to tighten and firm it up. Tie the excess and chill for about 30 minutes.
In three different flat wide dishes, prepare the flour, beaten egg, and breadcrumbs. Dredge the chicken in flour, egg, then coat with breadcrumbs.
Fry the chicken in a 325F pot of oil and cook for about 5 minutes per side. The internal temperature should be 165F. If the outside is already brown, but the center is still not cooked, finish in a 325F oven.
Melt the butter in a small pot over medium heat. Add the garlic and cook until soft.
Whisk in the flour for 1 minute.
Add the milk and whisk until well combined. Continuously whisk until it comes to a simmer and the mixture becomes thick.
Whisk in the mustard, salt, pepper, and parmesan cheese.
Slice the chicken cordon bleu into pieces, then drizzle the sauce. Serve and enjoy!
