To start, chop the Roma tomatoes and chorizo accordingly and set them aside. Next, add the chicken to a large mixing bowl, and season generously with salt and ground black pepper. Mix well, making sure every piece is seasoned well. Set aside. Place a large pan over medium heat and add the chopped chorizo. Cook it for two to three minutes until golden and for the fat to render, then set aside. In the same pan, add the chicken, then sear for three to four minutes on each side. Once done, set the chicken aside.

Add 1 tbsp of olive oil in the same pan, then add the chopped Roma tomatoes as well as the cherry tomatoes. Season with salt and ground black pepper and cook for two to three minutes or until soft. Next, add 1 tbsp balsamic vinegar, crushed garlic cloves, chorizo, chopped thyme, and basil stems. Mix and cook for two minutes. After this, add 1 cup of chicken stock, and bring it to a simmer. (Taste test at this point, adding a little sugar to taste.) Once simmering, add the chicken back to the pan, mix around gently, and bring everything to a simmer. Once simmering, transfer it to a 375-degree F oven and continue cooking it for 45 minutes. Serve with some toasted bread. Enjoy!
