If you love one-pan recipes, you have to try this dish from ThatGirlCanCook! on YouTube! It’s one of my favorite dishes to make under 30 minutes. It’s loaded with veggies, is seasoned well, and will surely become a crowd favorite; it’s also less dirty dishes after dinner! Watch the video below to learn the full recipe.
To start, boil your rice and steam your broccoli. In the meantime, heat 1 tbsp olive oil in a large pan over medium heat, then add the chopped chicken breast. Season with 1 tsp onion powder, 1 tsp garlic powder, 1/2 tsp ground black pepper, and 2 tsp cajun seasoning. Sear the chicken for three to five minutes. (Add a little water or broth if the pan gets too dry). After cooking, remove from pan and set aside. In the same pan, melt 1 tbsp butter, then add the diced onion and bell pepper. Saute until softened, then add 1/3 cup of chicken broth to deglaze the pan. Next, add the steamed broccoli and season with salt. Mix well, then remove from the pan and set aside.

Reduce the heat to low, then add 1 pint of heavy cream to the same pan, 1 cup of sharp cheddar cheese, and 1 cup of Colby jack cheese. Whisk to combine and season with 1/2 tsp ground black pepper and 1 tsp seasoned salt. Mix well and set it aside. Now, grease a 10″ cast iron skillet with some butter. Add the cooked rice, the cooked veggies, and the cooked chicken, then drizzle the cheese sauce all over. Mix everything to combine, then spread them nicely. Top it with some more shredded cheese and bake at 375 degrees F for 15 minutes. (Broil of desire to brown the top).
