This chicken bacon ranch casserole by Mr. Make It Happen is a delicious and easy one-pot meal. It’s packed with amazing flavors and ingredients that everyone in your house will surely savor. Ingredients:

  • 1 rotisserie chicken
  • 2-3 cups of frozen broccoli
  • 1 box Boursin garlic and herbs cheese
  • 1 lb russet or Yukon gold potatoes
  • 3-4 cloves of garlic
  • 1 onion
  • 1 cup of parmesan (shredded)
  • 2 cups of Colby jack cheese (shredded)
  • 5-6 slices of thick-cut bacon
  • green onion
  • 1 1/2 cups of sour cream
  • ranch seasoning to taste
  • 1/2 cup of ranch dressing (optional)
  • salt, pepper, garlic, onion powder, cayenne pepper

Instructions:

Step 1:

Wash the potatoes thoroughly. Once you rinse them off, dry them with a paper towel to remove all the dirt. If you don’t like potato skin, you can remove them, but for this recipe, we will leave the skin on the potatoes. Cut the potatoes into bite-size pieces. Place the cut potatoes into a pot with 2 inches of water. Bring to a boil for about 6 to 8 minutes or until they start to get tender. Once done, dry them up.

Step 2:

Take the skin off the rotisserie chicken, then remove the bone and cartilage.

Step 3:

Dice the onion and the garlic.

Step 4:

In a pan, place the bacon slices and cook all the way through. Once done, remove it from the pan and put it on a paper towel to let it drain. On the same pan with bacon fat, add onion and green onion. Mix them together. Once the onion is a little bit translucent, combine the garlic. Then season with salt, pepper, garlic, onion powder, and cayenne pepper.

Step 5:

Once the onion is soft, add the broccoli and saute. Next, add the broccoli and veggies to the pot of dried potatoes. Then add the shredded chicken, sour cream, and Boursin garlic and herbs cheese.  Mix all the ingredients into the pot.

Step 6:

Add ranch dressing, shredded cheese, and bacon. Season it to taste once combined. Mix then transfer to a 9 x 1 casserole dish then preheat the oven to 375 degrees F. Smoothen the top and top more with cheese and seasoning. Bake for about 20 minutes or until brown and bubbly.
