Ingredients:

  • 2 tablespoons of olive oil (divided)
  • 1.5 lbs of chicken (cut into 1-inch pieces)
  • 3 to 4 andouille sausage links (cut into 1/2-inch slices)
  • 2 cups of sweet onion (finely chopped)
  • 1 cup of finely chopped celery
  • 1 cup of finely chopped green bell pepper
  • 2 cloves of garlic (crushed) or 2 tablespoons of minced garlic
  • 4 teaspoons of creole seasoning
  • 1 tablespoon of Worcestershire sauce
  • 6 oz can tomato paste
  • 15 oz  can dice tomatoes with juice
  • 2 1/2 cups of long-grain white rice
  • 4 1/2 to 5 cups of chicken broth
  • fresh parsley for garnish

Instructions:

Step 1:

Place a pot over medium-high heat and add a tablespoon of olive oil. Once hot, add the sausages and cook for 2 minutes. Next, add the chicken and cook for 6 to 8 minutes. Transfer the sausages and chicken to a bowl leaving the oil.

Step 2:

Add another tablespoon of olive oil to the pot. Once hot, add the onions, celery, and bell pepper. Mix and cook for about 6 to 8 minutes.

Step 3:

Add the minced garlic and cook for 2 minutes. Bring back the chicken and sausages. Next, add the tomato paste, Worcestershire sauce, diced tomatoes, and two pinches of salt. Mix until well combined.

Step 4:

Pour the chicken broth and stir.

Step 5:

Add the long-grain rice and stir. Bring it to a boil, then lower the heat and let it simmer for 30 minutes with the lid on. After 25 minutes, stir it well.

Step 6:

Serve in bowls while still warm. Enjoy it with your family and friends!
