Chicken and Rice Recipe Ingredients:

  • avocado oil
  • 1 onion (diced)
  • 1 red and green bell pepper (chopped)
  • 3 cloves of garlic (diced)
  • 1.5 teaspoons of dried oregano or Italian seasoning
  • 2 cups of long-grain white rice
  • 4 cups of chicken broth or stock
  • 1 tablespoon of better-than-bouillon chicken base
  • salt, pepper, garlic, onion powder, and cayenne (all-purpose seasoning)
  • smoked paprika, adobo seasoning
  • freshly chopped parsley
  • fresh thyme
  • 2 tablespoons of butter

Note: you can substitute rice with cauliflower

How to Make Chicken and Rice:

Step 1:

Start by seasoning the chicken on all sides with all-purpose seasoning with a little bit of smoked paprika and cayenne, then prepare the vegetables.

Step 2:

Place a skillet over medium heat and add avocado oil. Once hot, add the chicken and sear for 1 to 2 minutes per side until golden brown. Transfer the chicken to a plate.

Step 3:

In the same skillet, add butter and the prepared vegetables. Cook them until they begin to get tender then add the chicken base. Next, add the long-grain white rice and mix well. Let the rice toast for about 2 to 3 minutes, then deglaze the bottom of the skillet with white wine and chicken stock. Bring it to a simmer.

Step 4:

Once simmering, add the chicken broth. Bring it back to a simmer, then add the cooked chicken and thyme. Place the lid and reduce the heat to a gentle simmer for about 20 to 25 minutes or until the chicken and rice are done. Season it to taste then garnish with chopped parsley before serving. Enjoy!
